Here are some tempting seasonal variations.

Salad Dressings

These recipes are ideal with any salad leaves and, preferably, fresh herbs. The deeper, nutty flavour of Oliovita Unfiltered Premium Extra Virgin Oil Olive means it complements rich sweeter dressings that are ideal for fresh salad leaves but are also enhanced by roasted pine nuts or roasted cashew nuts.

Oliovita Premium Unfiltered, Honey and
Balsamic Dressing (serves 3-4)

  • 6 tablespoons Oliovita Premium Unfiltered Extra Virgin Olive Oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 tablespoon muscovado/dark brown soft sugar
  • 1 teaspoon Dijon mustard
  • seasoning

Whisk all the ingredients listed above together, then pour over your freshly prepared salad leaves and herbs. Delicious!

Oliovita Premium Unfiltered, Demerara and
Grainy Mustard Dressing (serves 3-4)

  • 6 tablespoons Oliovita Premium Unfiltered Extra Virgin Olive Oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon grainy mustard
  • 1 heaped tablespoon demorara sugar
  • seasoning



Place all the ingredients in a bowl and whisk until combined; then pour the dressing over your freshly prepared salad. Scrumptious!

Oliovita Organic and Lemon Dressing (serves 3-4)

  • 6 tablespoons Oliovita Organic Extra Virgin Olive Oil
  • Juice of one lemon
  • seasoning




Place the salad leaves in a bowl, spoon the Oliovita Organic over and then add the lemon juice and seasoning. Lightly toss the salad. The Oliovita Organic is a light oil that enhances the flavour and brings out a fresh 'greenness' to the salad.
